Honeysuckle Tea

I recently started making my own herbal teas from my garden using mint, wild bergamot, lemon balm, stevia, and lavender. The teas turned out to be so delicious that I decided to do a little online research to see what other teas I could make using flowers that are already growing in my yard. I happen to have a few beautiful vines of honeysuckle in my backyard that are slowly taking over my gazebo. Honeysuckle flowers have a sweet honey flavor, which sounded perfect for teas. The result was better than I had imagined it would be and I will definitely be brewing another batch next week.

Please note that only the flowers of the honeysuckle are edible. The berries are poisonous.

To make the tea:

Start by plucking as many honeysuckle flowers as you can and place them in a colander.

Submerge the colander in water and thoroughly clean the flowers, making sure to remove any tiny bugs that may be hiding in the flowers.

Next, pack all of the flowers in the smallest mason jar you have available that can accommodate your flowers and then fill with hot water from your tea kettle.

Let the water cool to room temperature and then place the covered jar in your refrigerator overnight.

In the morning, pour the honeysuckle tea into a pitcher, straining the flowers through a mesh sieve.

This is a very concentrated tea, so add extra cold water to your pitcher and a small amount of honey to taste. Serve over ice and enjoy 🙂
