A couple of weeks back, I had a nice big harvest of radishes. Jesse and I enjoyed most of the radishes with some ranch dressing I had made…but what was I going to do with all of the radish greens? After doing about 5 minutes of internet research, I found a tasty looking soup recipe on allrecipes.com. I tweaked it a bit from the original and I do have to say that turned out to be pretty tasty.
Here’s what I did:
Melt 2T butter in a stock pot.
Add a diced yellow onion to the pot and sauté until the onion is tender, not brown.
Add 2 sliced potatoes, 4-8 cups of radish greens, and a few sliced radishes.
Mix and then add 4 cups of either chicken or vegetable broth. Simmer for 30 minutes.
Add 1/2 cup of half and half and then purée soup in the pot using an immersion blender.
Season with salt and pepper to taste and enjoy with some extra sliced radishes.
